These tasty brownies are totally guiltfree so enjoy them as a sweet treat instead eating a chocolate bar or other cake.

They are easy to make for even the most novice baker like myself. I have failed many times even using the packet boxes of brownies yet these come out perfect every time.
I literally throw everything in the food processor and turn it on. Depending on the quality of your blender you might need to keep pulsing until the dates are fully chopped up. You may leave some lumps in if you want to have a fruit texture in your brownie but for best results, I would recommend to blend until smooth. It should taste like fudge frosting at this point.
Once it is blended until smooth you can pour it into an over proof dish. I use a rectangular pyrex dish. To ensure your mixture does not stick ( and to reduce on washing up), I pre-line my dish with baking paper. Just make sure that you have the shiny, non-stick side up.
Place mixture in your preheated oven and soon you will start to smell the chocolatey goodness filling your kitchen. It should be cooked in about 35 minutes but keep checking and poke with a knife to make sure it is cooked. I take mine out when it is still a little soft so that it is very moist and chewy inside. But if you prefer a dry, firm brownie, leave in a little longer. I then cut it up into small bite-sized chunks and store in an airtight container in the fridge. You can also sprinkle on some desiccated coconut for decoration too.
- 1/2 cup almond milk
- 1/2 cup medjool dates or prunes
- 1/2 cup chocolate or salted caramel Vivo Life Protein Powder
- 1/4 cup raw cacao powder
- 1/4 almond flour or coconut flour
- 1/2 cup aquafaba or egg whites
- 3/4 teaspoon baking powder
- Use a food processed to until everything together until smooth
- Line an over proof dish with baking paper and pour in the mixture
- Bake in the oven at 160C for 35 minutes
- Cut into bite size chunks
