Healthy Waffles with Blueberry Sauce

Another guilt-free dessert recipe from us because we love you!

Have you ever just REALLY fancied a sweet treat but don’t wanna ruin all your hard work? Well this is for you right here. Super tasty, all good for you ingredients – the whole family will love them.  So easy to make but the one thing you will need to purchase before giving these a go is a waffle maker. We use a Breville ceramic one and I have to say it is AMAZING. Don’t look anywhere else if you don’t already have one, this is what you need.

It is easy too use and also easy too clean which is great. The waffle plates come right out of the machine so that you can wash them in the sink. Remember to oil your the waffle plates lightly before using. We only use Coconut oil for ours and it makes the clean up a breeze!!

When making these waffles, it is important to mix the dry ingredients FIRST, before adding the wet ingredients.

 

I chuck all the dry stuff in a bowl and give it a little stir to combine. Once it is mixed together, that’s when I add all the wet stuff. Another top tip is to add the lime juice last. Remember to let the mixture sit for 3 – 5 minutes before cooking. This allows the lime juice and the baking powder to get to work. While the mixture is resting, you can preheat your waffle iron so it is ready to go when you are.

 

After you have let the mixture sit for a little bit, you can start to pour onto your waffle machine. This is where I went horribly wrong the first time as I put waaaay too much in and it took ten years to cook. Getting the perfect amount can be a little tricky but after a couple goes, you will get the hang of it. I had a few goes before I got it just right, either way the “wrong” ones, still tasted great so it was all good.

Make sure your waffle iron is HOT before you start, so follow the manual carefully.

While your waffles are cooking you want to be getting on with the sauce so everything can be ready together. The sauce is nice fresh and hot, but I prefer it room temp, so I like to let it cool a little. You can also make this sauce with any other berries or fruits, but blueberry is my fav!

When your waffles are ready you can keep them warm in the oven on a plate while you cook the rest. Don’t put the oven too high else you will make your freshly soft fluffy waffles go hard. I prefer to heat the oven up and then turn it off completely while I cook the rest. This way the cooked waffles stay warm but won’t burn or go crispy.

My Top Tips for how to make your waffles before you begin:

  • Make sure your baking powder is fresh – that’s the secret to fluffy waffles!
  • Remember to lightly oil your waffle plates with coconut oil
  • Use a good waffle iron – one that heats evenly and doesn’t stick.
  • We buy alot of the ingredients from Coscto as it works out cheaper, however, we have sourced the same brands for you on Amazon, so you can order there if you don’t have a Costco near you. ( just click the items in blue and you can order directly from Amazon)
  • It important to use the ingredients we recommend here in the recipe. Using regular sugar or flour, for example, will still taste good, but you will no longer be making guilt-free waffles,
  • This is for a smaller batch , but this recipe can easily be doubled, tripled or quadrupled to your liking!

 

Ingredients

For the waffles:

For blueberry sauce:

  • 1 1/2 cups blueberries fresh or frozen
  • 1 1/2 tablespoons coconut sugar
  • 1 1/2 teaspoons chia seeds (optional, but really good to thicken up the sauce a little)

Instructions

  1. Preheat your waffle maker.
  2. Whisk together the spelt flour, baking powder, salt, and sugar.
  3. Add the organic coconut oil, water, vanilla extract, and lime juice.
  4. Let the batter sit for 3 – 5  minutes while it rises and the lime juice does its thing with the baking powder.
  5. Spoon batter into your waffle maker and cook according to your manual instructions.
  6. Make the blueberry sauce while waffles are cooking.
  7. Place the blueberries into a small pan and add the coconut sugar (If the blueberries are super sweet, you may not need much). You may want to add a teaspoon or two of water to get the process going.
  8. Heat over medium heat until the blueberries are soft and release their juices. Taste and add more sugar if needed. Add the chia seeds in to thicken the liquid and continue to warm through until it looks nice and juicy
  9. Serve waffles with  blueberry sauce and healthy banana ice cream (recipe coming soon!!!!)
